Woo! The time has finally come. I have officially launched a blog. And I’m so excited about it! I plan to keep these entries quick though informative, full of relatable and useful info (read: recipes and health tips!), and I’m making a promise to stay as consistent as possible. Really into accountability these days ;)

 To start..maybe I should introduce myself…

If you don’t know me, I’m Erin. A Certified Nutritionist from Toronto and now living that west coast life in glorious Vancouver, Canada. I love everything to do with food; growing it, harvesting it, sourcing it at the local market, cooking it, and of course eating it. It’s taken most of my life though to develop a healthy relationship with food. I used to see it as reward or punishment, used (and abused) it to soothe, and didn’t understand what hunger or satiation were. I dealt with many moons of digestive issues and debilitating anxiety (often connected) that left me feeling hopeless, depressed, and confused. I had extreme body image issues, zero confidence, and no idea what it what it was like to feel connected to my body and mind. I was the girl who always complained of a stomach ache, was consistently unsatisfied with how I looked, and was so deeply enveloped in a self-sabotaging mindset to realize my innate potential and potent inner wisdom. Fast forward many years, I slowly but surely became more and more dedicated to my journey. I read books, went to therapy, tried new recipes, but most importantly, became incredibly in tune with my needs. I now eat, sleep, breathe a holistic lifestyle and feel immense gratitude to share this knowledge in the work that I do. Which you will learn more about as I grow this blog. The best part of it all is that what I have to share is all quite simple (and delicious!). My goal is to help you understand that staying healthy and finding balance is completely within your reach.

Enough writing and reading though, right? Not sure about you but my attention span is very short. And so...on to the fun part!

I wanted to share a recipe I’ve been obsessing over recently. My garden is beginning to explode and it's reigniting my love for salads. Which means I have my fave dressings on rotation. This healthy twist on the classic caesar is tangy, garlicky, and undetectably dairy-free. It's always a crowd pleaser and also keeps well in the fridge.

1. Make the dressing. In a high powered blender, combine all ingredients. Blitz for 30 seconds, scrap down edges, blitz for another 30. You may need to repeat this once more. Add more salt + pepper, as desired.

2. In a large bowl combine greens and seeds. Drizzle 4-5 tbsp of dressing and toss to fully coat. Transfer the remaining dressing to a jar and store in the fridge for up to 5 days.

3. Enjoy!

Total Time: 10 minutes

1 bunch of kale, stemmed, chopped, and patted dry
1 head romaine, chopped
2 tbsp hemp seeds
¼ cup pumpkin seeds
3 tbsp capers

Best Ever Caesar Dressing:
½ cup raw cashews
⅔ cup water
½ tsp apple cider vinegar
½ lemon, juiced
1 tbsp caper juice
1 tsp dijon mustard
2 tsp nutritional yeast
1 clove garlic
½ tsp salt
½ tsp pepper

Spotted romaine, fresh from the garden!
